 The 5th Annual Rotary International Food Festival takes place on Saturday, July 25 from 1 to 3 p.m. at Houlton Middle High School — and this year's edition is the biggest yet, showcasing food, performances, and cultural displays from 30 countries.

 

What sets this festival apart is its authenticity: every country represented has a genuine connection to someone in the community, whether through heritage, military service, or lived experience. From Jamaica to Japan and Colombia to Scotland, local volunteers work with those individuals to share real traditions and stories.

 

Admission is free, with donations supporting Rotary's humanitarian partners. A new Community Gift Shop offers handcrafted items and baked goods for purchase. Doors open at 12:30 p.m. for opening ceremonies — arrive early to catch the cultural performances before the tasting begins.

I learned this cheesecloth hack on a tugboat in the Bering Sea from a Cajun camp cook who was an absolute master in the galley.

 

I learned a lot of great cooking techniques out on the boats — fresh seafood dishes, bold spices, and how to make select cuts of meat taste like something special. One of my favorite things was coming into a fishing port. We would trade meat for fresh fish, and somehow everybody walked away happy.

 

One of the funniest memories was watching a deckhand come back carrying a  Alaskan king crab. He had one held up by the claws, walking it over like he was escorting some sea monster across the deck. That crab was almost as tall as he was.

 

He looks at us and says, “What do I do with it?”

 

Someone hollers back, “Throw it in the shower. We’ll cook it after watch.”

 

I sailed with people from all over the world and picked up all kinds of ways to cook, season, prep, and order food. Before learning this trick, I would just grab a metal strainer and try to control the pour the hard way. The cheesecloth method changed everything.
